Travelling comfortably on a bicycle is all about having your gear low and balanced. With panniers the aim is to pack them so that you have roughly even weight on either side, as an unblanced load can affect the bikes handling in a negative way. Most minimalist packers could live out of just a single set of panniers and those who like to cart around all of their belongings can utilise a second set on the front. If you run out of room along the way you can also strap an additional backpack or bag on top of the rear rack and panniers.

A traveller who usually travels on food but has donned a bicycle for a while might find a trailer is a better way to carry their gear. A trailer lets you load your usual backpack onto it to ride and then you still have your backpack when ever you leave the bike.
